Vegetable Crudité with Avocado Dip

Ingredients

  • 2 Ripe avocados
  • 1 Garlic clove
  • 2-3 tbsp cilantro leaves
  • 1/3 cup plain coconut or other vegan yogurt
  • 1/2 Jalapeno Pepper seeded and minced
  • 1 Avocado
  • 2 limes juiced
  • Seas salt & pepper to taste

Vegetables to dip choose:

  • 1 red pepper, seeded and cut into dipping sticks
  • Endive leaves
  • Baby carrots
  • 1 small jicama root, peeled and cut into dipping sticks
  • 1 daikon radish, peeled and cut into dipping sticks

Directions

  1. Cut avocados in half, remove pits and spoon out flesh
  2. Put all dip ingredients into processor or blender until desired consistency
  3. Season with sea salt and freshly ground pepper
  4. Arrange cut vegetables on a platter
  5. Place avocado dip in a bowl in the center
