Hearts of Palm Ceviche

Growing up Peruvian ceviche has a special place in my heart. It's such a flavorful appetizer or salad that will make your heart sing!

Ingredients

  • 1 cup hearts of palm, sliced into small rounds (non BPA canned)
  • 1/4 cup or less red onion diced (*to taste)
  • 1 small sweet red pepper diced small
  • 1/4 small habanero' pepper, seeded and minced (*to taste)
  • 2 table spoons chopped fresh cilantro (*optional some people don't like cilantro lol)
  • Juice of 1-2 limes
  • 1 teaspoon sea salt to taste
  • Black pepper *optional

Directions

Combine ingredients through cilantro in a bowl, drizzle with lime juice and add salt; toss to combine

Season with pepper if desired and serve immediately, enjoy alone or served with plantain chips, organic tortilla chips, or on sliced baked sweet potato salted.
