Dandelion Apple Salad

Ingredients

  • Per 1 cup dandelion green
  • 1 green Apple
  • 1 small fennel bulb
  • Dressing:
  • 3 TBS lemon juice
  • 1/4 cup olive oil
  • 1 tsp honey
  • Sea salt 
  • Pepper
  • 1 TBS roasted pumkin seed

Directions

  1. Wash and slice thin dandelion
  2. Core and dice the apple
  3. Slice thin 1/2 cup of fennel
  4. Wisk Dressing: Lemon juice, olive oil, honey
  5. Salt and pepper to taste
  6. Roast seeds on a skillet, crush and use as garnish
